A bit of salami, a bit of cheese, a bit of ham. For many, that equation can come close to happiness, especially during World Cup season. But for nutritionist Nadia Hrycyk, it is an alert we must heed. In an interview, the specialist warned about the hidden risks of eating a charcuterie board and stated that «we all know that cold cuts are not healthy foods.»
«The most dangerous thing about processed meats, which is the category where cold cuts fall, is the amount of colorings and preservatives,» Hrycyk explained. «If I consume at least 50 grams every day, the incidence of developing colon or rectal cancer is much higher,» she illustrated.
The specialist’s argument was based on the confirmation by the World Health Organization (WHO) that this type of meat is in Group 1, with the highest scientific evidence of foods that could cause cancer. In the same category are tobacco and asbestos.
In the specialist’s words, «the main compound that would be related to the appearance of the disease is nitrosamines, which is also what gives this type of meat its pinkish appearance.»
When identifying the key that would tip the scales, Hrycyk stated: «It all depends on the frequency with which we eat a charcuterie board. If we eat cold cuts every day, it is more dangerous.»
In her presentation, the nutritionist also revealed alternatives to counteract the contraindications of excessive cold cut consumption. «What protects us from all this is the intestinal mucosa. And to promote its secretion, the best thing is to nourish ourselves with fiber,» she pointed out.
Among the most accessible options to obtain this component are fruits and vegetables, nuts, and rice options like yamaní.
Does cold pasta become fiber? they asked the nutritionist. «No,» she replied and added: «What happens is that the starch gelatinizes. That is, when we eat cold pasta, the only thing that happens is that it does not raise our blood sugar level.»
On the other hand, Hrycyk spoke about the role of cheeses. «Unlike processed meat, they have a more natural maturation,» she emphasized. «And besides cheeses, we can add carrot sticks and olives to charcuterie boards.»
«After all, the secret to good nutrition is not to be afraid of everything, but to be careful about where we get our information,» the nutritionist concluded.
