A bit of salami, a bit of cheese, a bit of ham. For many, that equation can approach happiness, especially during World Cup season. But for nutritionist Nadia Hrycyk, it’s an alert we must heed. During her appearance on a television program, the specialist warned about the hidden risks of eating a charcuterie board and stated that «we all know that cold cuts are not healthy foods.»
«The most dangerous thing about processed meats, which is the category where cold cuts fall, is the amount of dyes and preservatives,» explained Hrycyk. «If I consume at least 50 grams daily, the incidence of contracting colon or rectal cancer is much higher,» she illustrated.
The specialist’s argument was based on the confirmation by the World Health Organization (WHO) that this type of meat is in group 1, with the highest scientific evidence of cancer-causing foods. In the same group are tobacco and asbestos.
In the specialist’s words, «the main compound related to the onset of the disease is nitrosamines, which is also what gives this type of meat its pinkish appearance.»
When identifying the key that tips the balance, Hrycyk stated: «It all depends on the frequency with which we eat a charcuterie board. If we eat cold cuts every day, it’s more dangerous.»
In her presentation, the nutritionist also revealed alternatives to counteract the contraindications of excessive cold cut consumption. «What protects us from all this is the intestinal mucosa. And to promote its secretion, the best thing is to nourish ourselves with fiber,» she pointed out.
Among the most accessible options to obtain this component are fruits and vegetables, nuts, and rice options like yamaní.
