Fatty Liver: Mediterranean Diet Is Key and Warning About a Sweetener That Destroys the Liver

A specialist warns that 1 in 3 Argentines suffers from fatty liver, often without symptoms. The Mediterranean diet is the most effective, but high-fructose corn syrup, a sweetener metabolized only in the liver and damaging it, must be avoided.

Fatty liver has become a silent epidemic affecting one in three Argentines. Without clear symptoms in its early stages, this condition can lead to cirrhosis, heart attacks, and strokes if not treated in time. However, science has already found a solution: the Mediterranean diet.

According to cardiologist Jorge Tartaglione, the Mediterranean diet is the most effective for combating fatty liver because it is loaded with antioxidants, fiber from fruits, vegetables, and legumes, whole grains, omega-3, and is low in sugars. «It’s not about eliminating fats, but about controlling the amount of energy we consume and where it comes from,» the specialist clarified.

But there is a hidden enemy that is destroying the livers of Argentines: high-fructose corn syrup (HFCS). This liquid sweetener, cheap and ubiquitous in processed products, is metabolized only in the liver. «It circulates in many foods. You go to buy something and it’s in four hundred products. Avoid it,» Tartaglione warned. «This syrup is metabolized only in the liver. It impacts it and accumulates.»

The doctor also warned that fatty liver shows no symptoms until it is too late. «First it’s fat accumulation, then inflammation and scarring. Up to that point we can reverse it. But when cirrhosis arrives, it’s much more difficult,» he noted. He also directly linked it to the risk of myocardial infarction and stroke. «If I have a 40-year-old patient with fatty liver, I have to be very attentive. It’s like doing a heart analysis 10 years early,» he stated.

To detect it early, the specialist recommended two key tests: ultrasound and blood analysis. «When liver enzymes are elevated, that’s where the suspicion lies,» he indicated. And he added: «When you see that ultrasound, you can do many things to improve. Try to eat healthy and wholesome. Get checked.»

In addition to the Mediterranean diet, there are other natural allies. Fundahígado highlights beet juice, rich in potassium, vitamin C, and betalain, which reduces inflammation and protects the organ. Green tea, according to a meta-analysis, reduces the risk of hepatitis, fatty liver, and hepatocellular carcinoma. And coffee, in moderate amounts (3 to 4 cups per day), has shown protective effects against cirrhosis and liver cancer, even in decaffeinated versions.

The conclusion is clear: the Mediterranean diet is the best weapon against fatty liver, but high-fructose corn syrup must be eliminated from the diet. «It’s cheaper than sugar, but it destroys your liver,» Tartaglione stated. Liver health is at stake, and Argentines must become aware before it is too late.
