In an interview that is already sparking controversy, nutritionist Diego Sívori, director of the Nutrition degree program at UADE, revealed the truth about carbohydrates and digestion. According to the specialist, white rice is the easiest carbohydrate to digest, but most people avoid it due to prejudice. “Many say that, being a carbohydrate, it is very difficult to digest, when in reality it’s the opposite,” Sívori stated. He added: “But there is nothing easier to digest than a plate of rice.”
However, the expert clarified that to obtain these benefits, one must consume white rice, not brown rice. The same applies to pasta. “The big problem is its friends: cheese, sauces, and cured meats,” he asserted. In that regard, he recommended incorporating cold legumes for those who want to cool down without losing muscle mass.
But it’s not all about diet: Sívori also targeted alcoholic beverages. “Without a doubt, those with some type of coloring, like aperitifs, are the ones that cause the worst hangovers,” he assured. He explained that alcohol consumption leads to a caloric intake that the body cannot easily process: “If you overdo it with alcohol, your body will later demand a very large amount of energy. And everything that is left over goes to your abdominal fat reserves.” He also compared beer to wine: “A glass of beer or a glass of wine have very similar calorie levels. The only difference is that beer makes you more bloated.”
The nutritionist also debunked summer myths. “The three great myths of summer are that ice cream, a beer, or a bag of chips refresh you. These are possibly the three most consumed things this time of year, and all three cause heat,” he stated. Regarding ice cream, he detailed that “the body cannot fully utilize the calories. Of that ice cream, 70% translates into body heat, and the remaining 30% into energy. For all these reasons, saying that eating ice cream refreshes you is a myth.” As for french fries, he called them “the most addictive food in the world” because they combine carbohydrates, fats, and crunchiness, activating the brain’s hedonic centers. “Most likely, when you open a bag of chips, you’ll eat the whole thing, which doesn’t happen with a bag of broccoli,” he joked.
Finally, Sívori recommended seasonal fruits like melon and watermelon, which provide water and fiber. “In a slice of watermelon, the sugar level doesn’t even equal that of a candy,” he assured. And he gave an infallible tip: “Frozen grapes are an unbeatable healthy snack.”

Los que lo evitan son los mismos que compran quinoa importada que caga el medio ambiente. El capitalismo nos quiere flacos y sumisos, pero nosotros nos vamos a llenar de carbohidratos nacionales y populares, carajo!
